Maintenance of the Grove consists of soil and leaf tests, fertilizing and pruning to ensure healthy trees and high quality oil.

The first 100 trees were planted in 1994. Planting continued over the next few years and today 400 trees of various Itailian varieties are in production.

The trees are pruned annually to shape and to keep the height manageable for harvesting.

Harvesting occurs late March through to the end of April. The olives are selectively hand picked therefore ensuring quality. The first small crop of 120 kgs was picked and pressed in 1998 only four years after planting! Today, 10 years after the first trees were planted, the Grove is producing approximately 2000 kgs, with production increasing every alternate season. Olive trees, like other stone fruit, are free with their fruit every second year a problem that has to be factored into production.

Our Press we imported from Italy in 1999. It is an olimo centrifugal press that processes 50kg per hour. The olives are picked, sorted, weighed, washed and pressed with as little delay as possible - always the same day. The oil is left to settle and is then filtered before being stored or bottled.
